prep instructions:

Preheat oven to 350°F. Scrub baby potatoes to clean. Cut a thin slice off of the bottom of each potato so they will stand up without toppling over. Place on a baking sheet and bake for 20 minutes until tender. Scoop out potato creating a little bowl in the middle. In a large bowl, mash the potatoes that you scooped out, add butter, 1/4 cup sour cream, milk, salt and pepper. Once well combined, spoon the mixture back into the baby potato shells. Top with remaining 1/4 cup sour cream. Sprinkle with shredded cheese and bacon bit pieces. Garnish with chives (optional).
