prep instructions:

Brown beef in a skillet over medium heat; pour off excess fat. Add sloppy Joe sauce and corn and heat through. Remove from heat and stir in tomato. Cut avocado in half lengthwise, remove pit, peel and cut into slices. Spoon sloppy Joe mixture evenly onto tortillas; sprinkle 1/4 cup cheese over filling on each tortilla. Top with avocado slices and roll up to enclose filling.

Makes 6 servings.

  • 1 can (15.5 oz) sloppy joe sauceShurfine
  • 2/3 cup frozen corn, thawed and drained
  • 1/2 cup diced tomato
  • 1 avocado
  • 1-1/2 cup finely shredded colby-jack cheese
