Rise and Shine Muffins

prep instructions:

Preheat oven to 375°F. Line a 12-cup muffin tin with papers. Combine flour, baking soda, cinnamon and salt in a large bowl. Melt spread in a medium bowl in microwave oven for 40 seconds at 50% power; add sugar, eggs, and vanilla and whisk until well blended. Stir spread mixture into flour mixture until just combined. Fold in carrots, pineapple, coconut, pecans and raisins; do not over mix. Fill each muffin cups with 1/3 cup batter (cups will be full). Bake 25 to 30 minutes or until a pick inserted into a center muffin comes out almost clean. Cool in pan 5 minutes. Cool on wire rack 10 minutes longer before serving.

Yield: 12 muffins.
