easy sweet & sour chicken
Preheat oven according to directions on chicken package. Place chicken chunks in a single layer on a shallow pan sprayed with non-stick cooking spray. Bake chicken according to package directions. Meanwhile, heat oil in a large non-stick skillet. Sauté green pepper and carrots over medium heat until tender, about 5 to 7 minutes. Cook rice in water according to package directions; season rice as desired. Add hot chicken chunks, pineapple and chili sauce to peppers and carrots, cook and stir until all is coated and pineapple is heated through. Serve over rice.
