creamy grilled pineapple and fruit stack
Preheat grill or broiler. Cut pineapple into 8 slices, each about 1/2″ thick. Grill or broil pineapple slices, 4″ from heat source, 3 minutes. Turn pineapple and sprinkle each slice with 1/2 tsp brown sugar. Continue grilling 3 minutes; remove to a platter and allow to cool. Slice each kiwi fruit into 6 slices; remove peel from each slice with a round, crinkle edge cookie cutter. Assemble each stack using 2 slices of pineapple, 1/3 cup whipped topping, 3 slices of kiwi fruit, 1/4 cup strawberry slices and 2 Tbsp blueberries, alternating topping and fruit between layers. Garnish with lime rind and mint leaf.
