chicken & stuffing casserole
Preheat oven to 350°F. Brown chicken breasts in large skillet in 1 Tbsp butter; remove and set aside. Melt remaining butter in skillet. Add celery and onion and cook until soft, about 5 minutes. Add zucchini and red pepper; continue cooking 5 minutes. Add stufﬁng and 1 cup chicken broth. Stir until moistened. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray. Spoon stufﬁng into dish. Arrange browned chicken breasts over stufﬁng. Combine soup and remaining chicken broth; pour over chicken and stufﬁng. Cover and bake 30 minutes. Uncover and sprinkle with cheese; continue baking 15 minutes. Sprinkle with parsley.
